zucchini saute: the perfect side for the 4th of July!



Happy 4th of July...food, family, fun, fireworks, and freedom!

now, let's get to the food! my family loves this. it's my go to side for BBQ or Mexican. the zesty flavors and crispy veggies are perfect for just about any dish.

today, i'll be making this zucchini saute for our 4th of July family festivities! it's delicious, but the best part is that it's super easy. you probably have the ingredients in the fridge. yeah, it'll go perfect with the brisket we're having.

also, if you have veggies that are getting close to turning, throw them in. i sometimes add asparagus, eggplant, broccoli, green beans, or yellow squash. you could substitute the zucchini for just about anything! i cut my zucchini into strips, but you could dice them up.

this recipe will serve 3-4 people. if you're doubling so you can feed more, double the zucchini and bell pepper, switch to a large onion, stick with 4 garlic cloves, add a little more olive oil, and salt to taste.

ingredients:

2 zucchini (cut into strips)
1 red bell pepper
1 medium yellow onion (or red)
4 cloves of garlic (minced)
1 tbsp olive oil
1/4 tsp salt
fresh ground pepper to taste

start by heating a large skillet over medium high heat. add the olive oil and the red onion. saute until translucents. then, stir in the garlic. keep it moving for about 30 seconds. add the bell pepper. once the bell pepper begins to soften, you can throw in the zucchini and salt. stir to get it mixed well with the other flavors. stir it every couple minutes for a total of 10 minutes. add black pepper to taste.
