my thanksgiving dinner contribution: squash casserole


don't judge a recipe by it's main ingredient. if you hate yellow squash, you probably won't like this. but, if you're trying to get people to eat their veggies, give this a shot. if i bring this to a party, i usually get asked the recipe through the night. it's not what they expect!

ingredients:
1 1/2 sticks of butter
1 medium onion (diced)
2 cloves of garlic (minced)
8 yellow squash (peeled and chopped)
1 1/2 tbsp brown sugar
1/4 tsp salt
8 palmiers

preheat oven to 350 degrees fahrenheit.

begin by heating a saute pan to a medium heat. add 2 tbsp butter and onion and saute until caramelized. remove and set aside.


add 2 tbsp butter and squash. saute until caramelized. don't be afraid of browning...it's flavor. but don't burn it...that's gross! and onions back to pan. stir in brown sugar and salt. remove from heat.


in a food processor, crumble palmiers.




place squash and onion mix in a 9 x 9 baking dish. add crumble to top of dish. drizzle with 1 stick of melted butter. bake for 20 minutes.
