chicken fried steak...low carb and delicious!



i love chicken fried steak! always have, always will. add a side of mashed potatoes and slather it all with gravy, and i'm a happy girl with a happy tummy. but, since i've gone low-carb, this is a dish i've missed dearly. until now!

almond flour has come to the rescue, again. it's a fantastic flour substitute!

this chicken fried steak comes out crispy and tasty. heck, it's delicious. best of all, it's low carb!
adding garlic and onion powder to the almond flour mixture gives a huge flavor boost. but, you can skip it, and it'll still taste great.

if you've got 12" cast iron skillet with sloped sides, use it. the most important rule is to not overcrowd the meat. if you have to use a smaller skillet, cook 2 cube steaks at a time.

also, a splatter screen will come in handy. it'll keep your stove from becoming a greasy mess.

ingredients:

3 pounds of cube steak (about 6 tenderized round steak)
3 eggs
2 cups of almond flour
1 tbsp garlic powder (optional)
1 tbsp onion powder (optional)
2 tsp paprika
1 tsp salt
1 cup of lard or canola oil
1 cup of chicken broth
1/4 cup of cream

start by heating the lard or oil in a heat-safe 12 inch skillet over a medium-high heat.

season each side of the cube steak with salt and pepper and set aside. crack the eggs into a medium size dish and lightly beat. in another bowl, add the remaining dry ingredients and mix.



dunk a cube steak in the egg. then, dredge in the almond flour mixture and place on a dish. gently shake off the excess. repeat with the other steaks. allow the dredged cube steaks to sit for about 10-15 minutes. this would be the perfect time to prep your side dish.

maybe green beans or mashed cauliflower, or both!

gently place your dredged cube steaks into your hot skillet. 3 cube steaks should fit just fine. cook unitl golden brown for about 4 minutes on each side.



remove from skillet and allow to cool on a wire rack. if you don't have a wire rack, you can set them on paper towels to cool.



i had some green tomatoes, so naturally i fried those too!

grab a saucepan and bring the chicken broth and cream to gentle boil. whisk in 3 tablespoons of remaining almond flour mixture. the gravy will begin to thicken as it. add more almond flour if needed. add salt and pepper to taste.

serve over chicken fried steak.



for those of you who are terrified of eating fried foods, i'm gonna try baking this...someday. i imagine 400 degrees Fahrenheit for about 20 minutes will do the trick. you'll definitely need to use a wire rack, and don't flip them.

this recipe has approximately 8 grams of carbs per steak. i typically make 6 steaks. about 1/2 cup of the almond meal is discard, since i add extra to make sure i can bread them all. here's a tip, heat the leftovers in the morning and serve with eggs!

  4. I can't wait to try this! I've done CFS with spiced up pork rind crumbs, but not almond flour yet. Bet a mixture of the two would be good also.

  7. Just found this recipe and as my wife and I are both low carbers we were happy to find a way to keep chicken fried steak in our recipe box. We substituted the lard/canola oil with recycled bacon grease. I must say the hint of bacon in a chicken fried steak is a double bonus. Thanks for posting!!

  11. Aiming to do something is one thing, but knowing how to get there is another. Now that you have decided to consume less carbohydrates as part as your low carb diet, you should start planning of how you can achieve it. One important thing is of course to know what foods you should or should not be eating. low carb greek yogurt
