my thanksgiving dinner contribution: hummus
hummus isn't traditionally thanksgiving, but heck, who doesn't like hummus. besides, everyone needs something to much on when dinner is two hours behind schedule.
ingredients:
1 pound of chickpeas (see recipe below)
3 cloves of garlic (minced)
2 tsp salt
5 tbsp fresh squeezed lemon juice
1/3 cup water
1/3 cup tahini
1 tsp paprika, plus a dash when served
1/2 tsp cayenne
1/4 tsp crushed red pepper
1/4 tsp garlic powder
1/4 tsp cracked black pepper
1/2 cup extra virgin olive oil, plus 1 tbsp to drizzle when served
in a large food processor, process the chickpeas for 20 seconds. scrape down, and add all ingredients except olive oil and process for another 20 seconds. scrape down, and drizzle in 1/2 cup olive oil while processor is running. scrape down and process for another 10- 20 seconds or until smooth.
place into a serving dish and dash with paprika. drizzle 1 tbsp of olive oil over the top.
