flourless, low carb crepes...perfect as tortillas and wraps too!



these crepes are insanely awesome! i make them about twice a week for the family. they're super easy and super fast. you'd never guess that they're practically carb free!

the versatility makes them perfect for any meal...breakfast, lunch, snack, dinner, or midnight snack. add a little cumin and they're great for your chicken tikka masala. just a little stevia turns them into a stack of pancakes ready to be drizzled with sweetness. a dash of onion powder, and you can wrap these around some meatballs for healthy italian wrap. keep it simple by skipping the herbs and spices all together. then, you can have a couple for breakfast and a couple for lunch, and stuff them, smear them, or drizzle with whatever your heart desires!

the trick to making crepes is making sure you give the pan enough time to heat up. otherwise, you end up with crumbly, broken bits. so, let the pan heat up. also, you need a thin spatula to flip them. once they bubble up like pancakes, you can gently slip the edge of the spatula under the crepe. if it feels solid and lifts up easily, gently flip. oh, and let them cool off for a few minutes.

this recipe can make 4-6 crepes. i like making 6 crepes that are about 4" in diameter. they usually end up as tortillas. the leftovers end up and peanut butter wraps for my toddler's snack time.

this recipe is adapted from mellissa sevigny's i breathe...im hungry... go check out some of her other recipes. they're divine!

ingredients:
makes 6 crepes

2 oz cream cheese
2 whole eggs
1/2 tsp onion powder
pinch of salt

put all ingredients in a blender. blend until smooth. let egg mixture rest for a couple of minutes. meanwhile, heat a pan over medium high heat for a couple of minutes. grease hot pan with butter or oil spritz.

pour 1/6 of the batter into the hot pan. take pan's handle and spread the batter by tilting your wrist in a circular motion. don't worry if they're a bit irregular. cook for 2 minutes until golden, flip and cook 1 minute on the other side. let it cool on a clean kitchen towel or cooling rack. repeat with the rest of the batter.

this recipe is super low carb! if you wanted to eat all 6 crepes, you'd take in about 4 grams of carbs TOTAL. not bad, however, i usually only eat 2 crepes filled with delicious meat!

    3. beautiful girl - i use various size eggs depending on what i get for the week. the trick is blending through. letting the batter sit a bit so the bubbles settle, making sure the pan heats evenly (not too hot, not too cool), and spritz the pan with a little olive oil helps. if they still crack or fall apart add a dab more cream cheese. good luck!

  3. I just made these and added a Tablespoon of Flax Meal and a Tablespoon of water. I used them to make chicken enchiladas....sooo yummy! The kiddos loved them too :) Thanks!

  4. Looks great. Was wondering, do you know how many calories each crepe is, approx. How many carbs in each crepe, approx.
    have you tried it with fat free cream cheese?
    Had you any luck in making several in advance?

"low fat" labels usually means more carbs.

  7. Thanks for the recipe, i live the diversity. I put no seasoning on it and it taste a bit eggy so i suggest not to use 2 jumbo eggs.
